For our last ladies meeting of the season, the theme was "tea". There were little sandwiches and yummy warm scones. I was asked to "make something cute." Okay, cute. So I searched pinterest and found cute (you can find the recipe when you click on the picture): Isn't that adorable? That is not what mine looked like. Not that I didn't try! So, off to figure something else out. I called my husband to lament, and he asked why I didn't just make mini salads? Well, wasn't that what I was trying to do? Yes, but when he said it, this totally popped into my head--cupcake liners! Fancy little lettuces, then I julienned the carrots and placed them ever so dashingly. Cucumbers next, ooh that's blurry, sorry. I fried up the bacon. My bacon doesn't look anything like her bacon, but it tasted just as good, I'm sure! Sprinkle some feta cheese on there... Pack 15 of them in a 9x13 pan, and voila! These were a definite hit; I didn't bring any home. (I did load up my dish with other people's leftovers, though. :-) Too bad I only learned at the last meeting until September to take a big dish so it doesn't make me look greedy taking a lot of leftover food home with me.) That is not to say that I don't still have a bunch at home--2 carrots and 2 cucumbers, half a bowl of bacon, most of the lettuce, and lots of cheese. So for lunch the next day, I made myself some salad. If you know anything about me, you will know this is not normal. (I also added a drizzle of Italian dressing over my salad. It expired a couple months ago, but it smelled fine.) Bacon and feta cheese tastes good together. Course, there are some people who will argue that bacon and any food tastes good together. I don't know about that, but this salad was pretty good.

Your little salads look cuter than the one you tried to imitate! But your salad for lunch looks absolutely delicious!!!

Who am I, you ask?
In 2006 I had a stroke, and every day my husband encourages me to use my remaining brain cells to the best of my ability. I love to organize, make crafts, and go on adventures (safe ones). I hope that through my blog posts, you will be encouraged to accept and make the best of challenges God throws at your life. Categories
